Pontormo Knife with Block

Description:

The Pontormo knife is extremely versatile and, thanks to its shapes, lends itself to multiple uses.
It is a reproduction of a knife depicted in the painting “Supper at Emmaus” by the painter Jacopo Carucci, known as Jacopo da Pontormo or simply Pontormo, on display at the Uffizi Gallery in Florence.
It is very convenient for cutting cheese, but is also ideal for meat and vegetables.
Its blade is angled to the handle to force better, it has a curved cutting edge to function as a crescent, and with its blade width you can easily pick up the cut.
The smooth blade allows food to be cut correctly, preserving its flavor and appearance.
It is offered together with its own unique log, so that it can be safely stored and, at the same time, have it easily available at all times.
An original gift idea that also becomes a kitchen decor item.

How we sharpen Berti knives

The sharpening of our knives is a handcrafted process involving three separate manual steps. These steps give the blade an optimal geometry for daily use. In addition, the blade edge gradually wears down following a precise geometry, allowing the knives to maintain their cutting capacity over a long period of time and providing a highly enjoyable user experience.

The secrets to maintaining sharpness

The secrets to maintaining the sharpness of a high-quality knife are the use of a proper cutting angle, consistency in movement on the stone, and care in the appearance of the edge.
With time and experience this sharpening procedure will come automatically. In any case, you can always request our handcrafted sharpening service.

Methacrylate

We chose to use Polymethylmethacrylate cast in sheet and machined from solid, although more complex to work with, it offers stability over time without yellowing or aging, maintaining its luster. Thanks to a unique stabilization process, we avoid breakage in the dishwasher.

Boxwood

Coltellerie Berti uses boxwood, a plant that typically grows in the Mugello area, which is a material of elegant simplicity, capable of increasing its appeal over time as its color changes naturally from yellow-orange to hazel-brown.

Cornotech

"Cornotech" is a high-quality orthophthalic polyester resin used by Coltellerie Berti to make handles with horn-like color effects. This resin is very durable and stable over time and retains its luster for a long time.

Horn

Horn is a natural material, which is why no two horn handles are the same. The horn used by Berti Cutlery comes only from animals that have reached the end of their lives without direct animal sacrifice.

In Berti knives, the union between the blade and the handle can be achieved in the following ways:

Laser-cut blade knife with riveted full tang

Forged knife with half tang and full handle

Forged knife with full tang and cheek handle

Your precious Berti knives are made from high-quality cutting steel, and we want to share some tips with you so that you can take optimal care of them. Remember that proper maintenance can make them last longer.

  • Dishwasher: If you own the version with the methacrylate handle, you can put them in the dishwasher, but it is important to be aware of the possible consequences. The dishwasher can accelerate the aging of any item washed inside it, so consider this option carefully.
  • Steel quality: It is true that high-quality cutting steels may be less stainless, but this is a sign of their authenticity and strength. Don't worry about any stains or halos and learn how to take care of them.
  • Stains on blades: Your blades may accumulate small reddish spots or bluish halos. This can happen if you let them dry in the dishwasher or dirty for a long time after use, or if the washing water is rich in iron. However, these stains will not affect the functionality of your knives and can be removed easily.
  • Hand washing: The secret to keeping your knives at their best is thorough hand washing and immediate drying after each use. This preserves their beauty and performance over time.
  • Special handles: If you have knives with handles made of materials such as horn, wood, or other natural materials, hand washing and immediate drying are essential to ensure their integrity.
  • Detergents and temperature: Do not use harsh detergents or water at a temperature higher than 60°C when washing. This will help protect the surface and shine of your knives.

Remember, loving and careful care of your knives will ensure their long life and flawless performance.

If you have any questions, we are here to help you take care of your precious Berti knives.
